Description

This quick lamb stir-fry offers a delicious blend of savory flavors and textures. Tender strips of boneless lamb are paired with crisp-tender bok choy and earthy mushrooms, all coated in a rich oyster sauce glaze. Toasted pine nuts add a delightful crunch, while ginger and cornstarch create a smooth, flavorful sauce. Perfect for a busy weeknight, this dish comes together in minutes using a microwave, making it an easy yet satisfying meal. Serve over steamed rice for a complete, comforting dinner that balances protein and vegetables beautifully.

Ingredients

Directions

  1. Partially freeze the lamb to make it easier to slice thinly.
  2. Slice the lamb into thin, bite-size strips.
  3. In a 2-cup microwave-safe measure, stir together 1/3 cup water, oyster sauce, cornstarch, grated gingerroot, and chicken bouillon granules until smooth.
  4. Microwave the sauce mixture, uncovered, on high power for 1 1/2 to 2 minutes, stirring every 30 seconds, until thickened and bubbly. Set aside.
  5. In a small nonmetal microwave-safe bowl, combine the bok choy, sliced mushrooms, and 2 tablespoons of water.
  6. Cover the bowl with vented clear plastic wrap.
  7. Microwave the vegetables, covered, on high power for 3 to 4 minutes, or until the bok choy is just crisp-tender. Drain any excess liquid and set aside.
  8. Preheat a 6 1/2-inch microwave browning dish on high power for 3 minutes.
  9. Add the cooking oil to the hot browning dish and swirl to coat the bottom.
  10. Add the lamb strips to the oiled dish.
  11. Microwave the lamb, covered, on high power for 1 1/2 to 2 1/2 minutes, or until cooked through. Drain off any excess fat.
  12. Stir the reserved oyster sauce mixture, toasted pine nuts, and cooked vegetable mixture into the lamb.
  13. Serve immediately over hot cooked rice if desired.

Note

Oyster sauce is a staple in Asian cooking, adding a savory, slightly sweet umami flavor. If unavailable, you can substitute with hoisin sauce or soy sauce mixed with a little sugar.

For best results, ensure the lamb is sliced very thinly while partially frozen. This ensures quick and even cooking in the microwave.

Toasting the pine nuts beforehand enhances their flavor. You can toast them in a dry skillet over medium heat for 2-3 minutes until golden, or in the microwave for 1-2 minutes, watching closely to prevent burning.

If you do not have a microwave browning dish, you can sear the lamb in a small skillet on the stovetop instead. Heat oil over medium-high heat and cook lamb for 2-3 minutes until browned.
