Directions
-
In a large bowl, combine the ground lamb, grated onions, beaten eggs, breadcrumbs, cinnamon, cumin, chili powder, turmeric, allspice, and parsley. Mix thoroughly until all ingredients are evenly distributed.
-
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
-
Take approximately 1/4 cup of the lamb mixture and shape it around a skewer, forming an elongated sausage shape about 3 to 4 inches long. Repeat with the remaining mixture to make more skewers.
-
While the kofta are shaping, prepare the yogurt sauce. In a small bowl, combine the plain yogurt, lemon juice, tahini paste, crushed garlic, and water. Mix well until smooth and creamy.
-
Grill the kofta skewers over medium-high heat, turning occasionally, until cooked through and lightly charred on the outside, about 10 to 15 minutes.
-
Serve the hot lamb kofta immediately with the yogurt sauce on the side.

Note
Ensure the lamb mixture is well-mixed but not overworked to keep the kofta tender.
If the meat mixture seems too loose to hold its shape, add a few more breadcrumbs or chill the mixture for 15 minutes before skewering.
The yogurt sauce can be made ahead and stored in the refrigerator. Stir well before serving.
