Lamb Phyllo Rolls
Description
These Lamb Phyllo Rolls are a delightful savory appetizer that combines tender ground lamb with aromatic herbs and cheeses, all encased in delicate, crispy phyllo pastry. The filling is rich with flavor, featuring sautéed onions, sweet tomatoes, and a blend of myzithra and feta cheeses seasoned with cinnamon and nutmeg. The contrast between the flaky, buttery crust and the warm, spiced meat makes every bite satisfying. Perfect for entertaining, these rolls are easy to prepare and can be made ahead of time.Directions
-
Warm some olive oil and butter in a heavy skillet over low heat. Add the chopped onion and sauté until soft, about 8 minutes.
-
Raise the heat, add the ground lamb, and sauté until lightly browned, breaking up any lumps with a wooden spoon.
-
Add the diced tomatoes, honey, cinnamon, salt, and half of the pepper. Bring to a boil.
-
Reduce the heat and simmer for 15 minutes, or until almost all the liquid has evaporated.
-
Stir in the marjoram and parsley. Add additional cinnamon, marjoram, and pepper to taste. Do not add salt at this stage. Set aside to cool.
-
Press the myzithra cheese through a sieve or food mill into a bowl.
-
Combine the sieved myzithra with the feta cheese, nutmeg, remaining pepper, and egg yolks. Cover and set aside.
-
Combine the remaining butter and olive oil in a small saucepan. Melt over very low heat.
-
Preheat the oven to 375°F (190°C). Brush a heavy baking sheet with some of the melted butter-oil mixture.
-
Lay the phyllo sheets one on top of another and cut them in half crosswise.
-
Brush each phyllo stack lightly with the butter-oil mixture.
-
Divide the lamb mixture and the cheese mixture into 12 portions. Place a portion of lamb and a portion of cheese at one end of each phyllo stack.
-
Roll up the phyllo sheets tightly around the filling to form rolls. Place seam-side down on the prepared baking sheet.
-
Brush the tops of the rolls with the remaining butter-oil mixture.
-
Bake for 20-25 minutes, or until the phyllo is golden brown and crispy.
-
Let cool for 5 minutes before serving. Dust with confectioners' sugar and a pinch of cinnamon if desired.
