Description

This sophisticated dessert combines delicate, crisp chocolate wafers infused with black pepper with a luscious, dense chocolate mousse. The wafers provide a subtle heat and crunch that contrasts beautifully with the smooth, velvety texture of the mousse made from semisweet chocolate and heavy cream. It is an ideal treat for special occasions or elegant dinner parties, offering a complex flavor profile that balances sweetness with aromatic spice. Serve chilled for the best texture and flavor experience.

Directions

  1. Position a rack in the lower third of the oven and preheat to 275°F (135°C).
  2. Generously butter two large baking sheets.
  3. Create a stencil by cutting a 3 1/2 inch circle out of a plastic coffee can lid and discarding the center, keeping the outer rim.
  4. Sift together the flour, cocoa, and black pepper into a large stainless steel bowl.
  5. In a bowl of a heavy-duty electric mixer fitted with the wire whip attachment, beat the confectioners' sugar and egg whites on medium speed until well combined.
  6. Continue beating on medium-high speed until glossy and stiff peaks form, about 5 to 6 minutes.
  7. With a large rubber spatula, fold one-third of the flour mixture into the stiff egg white mixture.
  8. Fold in the vanilla extract and half of the melted butter.
  9. Fold in another third of the flour mixture.
  10. Fold in the rest of the melted butter and the remaining flour mixture.
  11. Place the wafer stencil on the baking sheet and fill it with batter using a spatula.
  12. Repeat this process with the remaining batter to make multiple wafers.
  13. Bake the wafers until they are pliable when they come out of the oven, but will become crisp as they cool.
  14. Carefully remove the individual wafers to a cooling rack to finish cooling.
  15. To make the mousse, melt the semisweet chocolate with milk, sugar, salt, oil, port, and vanilla extract in a double boiler or microwave, stirring until smooth.
  16. Whip the heavy cream until stiff peaks form.
  17. Fold the whipped cream into the chocolate mixture until fully combined.
  18. Spoon the mousse into serving dishes and refrigerate until set.
  19. Serve the chilled mousse topped with the chocolate-pepper wafers.
