Soften the gelatin in part of the milk.

Combine the egg yolks, remaining milk, sugar, salt, and lemon peel and cook gently until slightly thickened.

Stir in the softened gelatin until completely dissolved, then allow the mixture to cool.

Blend the cottage cheese until smooth, then combine it with the cooled gelatin mixture, lemon juice, and vanilla.

Whip the heavy cream until firm.

Beat the egg whites until they hold firm peaks.

Gently fold the whipped cream and egg whites into the cottage-cheese mixture.
