Description

This Lemon-Ginger Trifle is a bright, elegant dessert that balances the tartness of fresh lemon juice with the warm spice of ground ginger. Layers of angel food cake cubes are soaked in a silky, homemade lemon-ginger syrup, creating a moist and flavorful base. Freshly sliced apricots add bursts of juicy sweetness and beautiful color, while a light whipped topping adds creamy texture without weighing it down. It is an ideal make-ahead dish for summer gatherings, potlucks, or a light weekend treat. The combination of citrus and stone fruit makes this trifle feel both classic and refreshing, perfect for serving chilled after a hearty meal.

Ingredients

Directions

  1. In a 2-quart saucepan, whisk together sugar, cornstarch, and salt.
  2. Gradually stir in water until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  4. Boil and stir for 1 minute, then remove from heat.
  5. Stir in grated lemon peel, lemon juice, margarine, and grated gingerroot.
  6. Press plastic wrap or waxed paper directly onto the surface of the glaze to prevent a skin from forming.
  7. Refrigerate the glaze for about 4 hours, or until completely chilled.
  8. Prepare whipped topping according to package directions, substituting skim milk if desired.
  9. In a large glass bowl or individual serving glasses, layer half of the angel food cake cubes.
  10. Spread half of the chilled lemon-ginger glaze over the cake layer.
  11. Add half of the fresh apricot slices and half of the canned apricot slices.
  12. Repeat layers with remaining cake, glaze, and apricots.
  13. Top with the prepared whipped topping.
  14. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld.

Note

Cake Cube Yield: A standard 7-inch angel food cake loaf yields about 6 cups of cubes; a 7-1/2-inch ring yields about 11 cups. Adjust the number of cake layers accordingly.

Fresh vs. Canned Apricots: This recipe uses both fresh and canned apricots for texture and convenience. If fresh apricots are unavailable, you can use two cans of apricots, drained well.

Ginger Variation: Fresh grated gingerroot provides a more aromatic and less spicy flavor than ground ginger. If using ground ginger, you may start with 1 teaspoon and adjust to taste.

Storage: Store the trifle in the refrigerator for up to 2 days. The cake may become very soggy if stored longer.

Vegan Option: Ensure the whipped topping mix is vegan-certified or use a store-bought vegan whipped cream alternative. The margarine should also be plant-based.
