Directions

  1. Combine 1 cup water and 3/4 cup sugar in a small saucepan.
  2. Bring mixture to a boil, stirring constantly until sugar dissolves.
  3. Cook for 1 minute, then remove from heat.
  4. Pour the simple syrup into an 11x7-inch baking dish and chill thoroughly.
  5. Place 2 cups raspberries, 1/3 cup sugar, and 1 tablespoon balsamic vinegar in a food processor.
  6. Process until smooth.
  7. Strain the raspberry mixture through a sieve into a bowl to remove seeds.
  8. Cover the coulis and chill until ready to serve.
  9. Add 1 1/2 cups fresh lemon juice and 1 cup fresh orange juice to the chilled sugar syrup.
  10. Whisk until fully blended.
  11. Freeze the lemon mixture for 4 hours or until firm, stirring every 30 minutes if using an ice cream maker, or scraping with a fork if freezing in a dish.
  12. Preheat oven to 450 degrees F (230 degrees C).
  13. Halve and pit the peaches.
  14. Place peach halves skin-side up on a jelly-roll pan.
  15. Bake for 4 minutes to loosen the skins.
  16. Let peaches cool slightly, then peel off the skins.
  17. Spoon 1 1/2 tablespoons of raspberry coulis into the bottom of each of 6 dessert dishes.
  18. Top with 2/3 cup of the frozen lemon sorbet.
  19. Place 2 peach halves on top of the sorbet.
  20. Sprinkle with 1 1/2 teaspoons grated lemon rind.
  21. Garnish with fresh raspberries and mint sprigs if desired.
