Description

These lemon-spiced pears are a comforting and elegant dessert that highlights the natural sweetness of ripe fruit. Bartlett or Bosc pears are gently simmered in a simple syrup infused with fresh lemon juice, peel, aromatic cinnamon sticks, and whole cloves. The result is tender, juicy pears with a beautiful golden hue and a complex flavor profile that balances sweet and tart notes. Perfect for special occasions or as a sophisticated end to a heavy meal, this dish requires minimal effort but delivers maximum flavor. The spices infuse the syrup beautifully, creating a sauce that is just as delicious as the fruit itself.

Ingredients

Directions

  1. Peel the lemon using a vegetable peeler, avoiding the white pith. Halve the lemon and squeeze to extract 1/4 cup of fresh juice.
  2. In a large Dutch oven or kettle, combine the water, sugar, cinnamon sticks, cloves, lemon peel, and lemon juice.
  3. Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer uncovered for 5 minutes to create a spiced syrup.
  4. Wash, peel, halve, and core the pears.
  5. Place the pear halves in a solution of ascorbic acid color keeper (prepared according to package instructions) to prevent browning while preparing the syrup.
  6. Drain the pears and add them to the simmering syrup.
  7. Cover the pot and simmer the pears gently for 5 minutes, or until just tender.
  8. Using a slotted spoon, carefully remove the cinnamon sticks and lemon peel from the syrup and discard.
  9. Pack the hot pears into hot, clean pint jars, leaving 1/2 inch of headspace.
  10. Ladle the hot spiced syrup over the pears, maintaining 1/2 inch headspace.
  11. Remove air bubbles with a non-metallic utensil, wipe the jar rims clean, and adjust the lids.
  12. Process the filled jars in a boiling-water canner for 20 minutes to seal.
  13. Remove jars from the canner and let them cool on racks overnight.
