Ingredients

Directions

  1. Combine sugar, cocoa, and salt in a large, heavy-bottomed saucepan. Stir to mix and break up any lumps of cocoa powder.
  2. Add corn syrup, evaporated milk, and 2 tablespoons of butter to the saucepan.
  3. Place the pan over medium heat and cook, stirring constantly, until the mixture comes to a boil.
  4. Stop stirring and cover the pan with a tight-fitting lid for about one minute to steam off any sugar crystals on the sides.
  5. Uncover and continue to cook without stirring, swabbing down the sides of the pan from time to time with a pastry brush dipped in water, until the mixture reaches the soft-ball stage (234F (112C) (116C)to 240F).
  6. Pour the hot fudge mixture onto a marble slab, large platter, or into a flat baking dish. Do not scrape the pan.
  7. Heat lemon zest, lemon juice, and vanilla to a boil and pour immediately over the hot candy.
  8. Top with the remaining 2 tablespoons of butter.
  9. Let the mixture cool to room temperature without disturbing it.
  10. Stir the fudge with a spatula or plastic scraper until it becomes thick and starts to lose its gloss.
  11. Add the chopped walnuts just as the fudge becomes too stiff to stir easily.
  12. Spread the fudge onto a buttered plate or a sheet of plastic wrap.
  13. Allow to solidify for a few minutes before cutting into squares.

Note

To check for soft-ball stage without a thermometer: drop a small amount of the hot syrup into a cup of cold water. If it forms a soft ball that flattens when lifted out, it is ready.

Store fudge in an airtight container at room temperature for up to 1 week, or refrigerate for up to 3 weeks. Bring to room temperature before serving for best texture.

For a vegan version, substitute butter with a high-quality plant-based butter and evaporated milk with coconut milk or a thick oat milk.

Ensure your candy thermometer is accurate for best results. If you don't have one, use the cold water test method described above.

The stirring process to thicken the fudge can take 10-15 minutes. Be patient and persistent to achieve the right consistency.
