Ingredients

Directions

  1. Preheat the oven to 375F (190C).
  2. Prepare the apple filling by combining 1 cup brown sugar, 3 tablespoons softened butter or margarine, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Mix until a thick paste forms.
  3. Peel, core, and halve 4 medium apples.
  4. Press the brown sugar paste into the center of each apple half, patting any extra filling onto the outside of the apples.
  5. Make the pastry by combining the flour and 1 teaspoon salt in a bowl.
  6. Cut in the shortening until the mixture resembles coarse crumbs.
  7. Stir in the cold milk until the dough forms a cohesive ball.
  8. On a lightly floured surface, roll the pastry into a 14-inch square.
  9. Cut the pastry into four 7-inch squares.
  10. Place one filled apple half in the center of each pastry square.
  11. Brush the edges of the pastry with beaten egg white.
  12. Fold the corners of the pastry up to the center, pinching them together to seal the dumpling.
  13. Place the sealed dumplings in a greased 9-inch square baking dish.
  14. Bake for 35 to 40 minutes, or until the pastry is golden brown.
  15. While baking, prepare the lemon sauce by combining the sugar and the cornstarch in a saucepan.
  16. Stir in 1/2 cup water and bring to a boil, boiling for 2 minutes until thickened.
  17. Remove from heat and stir in 4 teaspoons lemon juice, 1/8 teaspoon salt, and 2 teaspoons grated lemon peel.
  18. Serve the warm dumplings topped with the warm lemon sauce.

Note

Use firm apples like Honeycrisp or Granny Smith for the best texture.

If the pastry is too sticky, add a little more flour. If it's too dry, add a teaspoon more milk.

Leftover dumplings can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350F for 10 minutes.

For a richer sauce, you can substitute half of the water with orange juice or apple juice.
