Description
A simple lentil side dish featuring pearl onions and bay leaf, gently simmered until creamy yet firm. An easy accompaniment to roasted meats or vegetarian meals.Ingredients
Directions
-
Rinse the lentils thoroughly and drain.
-
Place the lentils, frozen pearl onions and bay leaf in a large saucepan. Add enough water to cover the ingredients by about 1 inch.
-
Bring to a simmer over medium heat, then reduce the heat to low, cover and cook gently for 20 minutes.
-
Uncover, stir in the salt and add a little more water if necessary so the lentils are just covered.
-
Cover and continue simmering for 10 to 25 minutes, or until the lentils are tender and creamy but still hold their shape.
-
Remove the bay leaf and serve warm.
