Description

A simple lentil side dish featuring pearl onions and bay leaf, gently simmered until creamy yet firm. An easy accompaniment to roasted meats or vegetarian meals.

Ingredients

Directions

  1. Rinse the lentils thoroughly and drain.
  2. Place the lentils, frozen pearl onions and bay leaf in a large saucepan. Add enough water to cover the ingredients by about 1 inch.
  3. Bring to a simmer over medium heat, then reduce the heat to low, cover and cook gently for 20 minutes.
  4. Uncover, stir in the salt and add a little more water if necessary so the lentils are just covered.
  5. Cover and continue simmering for 10 to 25 minutes, or until the lentils are tender and creamy but still hold their shape.
  6. Remove the bay leaf and serve warm.
