Description

This Light Chocolate Decadence is a show-stopping dessert that balances intense chocolate flavor with a surprisingly light, airy texture. Unlike dense traditional chocolate cakes, this recipe uses a whipped egg white meringue technique to create a soufflé-like crumb that remains moist and gooey in the center. The base is a smooth, simmered chocolate custard made with bittersweet chocolate, Dutch-process cocoa, and low-fat milk, ensuring a deep, complex flavor without excessive heaviness. Chilled for several hours, the cake sets beautifully, allowing for clean slices that hold their shape. It is an elegant choice for dinner parties or special celebrations, offering a sophisticated taste experience that feels indulgent yet refined. Serve with fresh berries and a dollop of whipped cream for a perfect finish.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place oven rack in the lower third of the oven.
  3. Lightly coat the inside rim of an 8-inch wide, 1 1/2 to 2-inch deep round cake pan with nonstick cooking spray.
  4. Line the bottom of the pan with parchment paper cut to fit.
  5. Place finely chopped bittersweet chocolate in a large bowl and set aside.
  6. Separate the eggs: crack one egg into a small bowl, then separate the second egg, placing the yolk with the first whole egg and the white into a larger separate bowl.
  7. Add the additional egg white to the bowl with the separated white.
  8. Add vanilla extract to the bowl containing the egg yolks and whole egg.
  9. Add cream of tartar to the bowl with the egg whites.
  10. In a 1 to 1.5-quart saucepan, combine cocoa powder, flour, and 2/3 cup of sugar.
  11. Gradually whisk in the low-fat milk until the mixture is smooth and free of lumps.
  12. Stir the mixture over medium heat until it simmers, about 6 minutes; do not let it scorch.
  13. Continue stirring and cooking for 1.5 minutes longer.
  14. Pour the hot cocoa mixture immediately over the chopped chocolate in the large bowl.
  15. Stir constantly until the chocolate is completely melted and the mixture is smooth.
  16. Beat the egg whites and cream of tartar with an electric mixer at medium speed until soft peaks form.
  17. Increase speed to high and gradually add the remaining 1/4 cup of sugar.
  18. Beat until the egg whites hold stiff, but not dry, peaks.
  19. Stir about 1/4 of the beaten egg whites into the chocolate mixture to lighten it.
  20. Gently fold in the remaining egg whites until just combined and no white streaks remain.
  21. Scrape the batter into the prepared cake pan and smooth the top.
  22. Place the cake pan inside a larger roasting pan that is at least 2 inches wider and 2 inches deeper.
  23. Set the pans in the preheated oven.
  24. Carefully fill the outer pan with boiling water until it reaches halfway up the sides of the cake pan.
  25. Bake just until the center of the cake springs back when very gently pressed; it will still be quite gooey inside.
  26. Lift the cake pan out of the water bath and set it on a wire rack to cool.
  27. Once cool to the touch, cover the cake tightly with plastic wrap.
  28. Chill thoroughly in the refrigerator for at least 8 hours, or up to 2 days.
  29. To unmold, slide a thin knife between the rim of the pan and the cake to loosen it.
  30. Cover the top of the cake with a sheet of waxed paper.
  31. Place a flat serving plate upside down on top of the waxed paper.
  32. Holding the pan and plate together firmly, invert them quickly.
  33. Shake gently if needed to loosen the cake from the pan.
  34. If the cake sticks, place a hot damp towel on the bottom of the pan for a few minutes, then gently shake again.
  35. Remove the pan and peel off the parchment paper.
  36. Invert a serving dish onto the cake.
  37. Supporting the cake with the flat plate, turn it over again onto the serving dish.
  38. Remove the flat plate and discard the waxed paper.
  39. Cut the cake with a thin sharp knife, dipping it in hot water and wiping it clean between each cut.
  40. Garnish each slice with fresh raspberries and a dollop of whipped cream.
