Description

This Light Turkey Jambalaya offers a comforting, hearty meal without the heavy guilt of traditional sausage-heavy versions. By using lean turkey breast and sliced turkey sausage, you get all the rich, smoky flavors of the Deep South with a lighter protein profile. The dish is built on a foundation of sautéed onions and bell peppers, infused with paprika, thyme, and cumin for that authentic Cajun kick. White rice absorbs the savory broth and diced tomatoes, creating a cohesive, flavorful one-pot wonder perfect for busy weeknights.

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, green and red bell peppers; sauté for 5 minutes until slightly softened.
  3. Add the minced garlic and sauté for 2 minutes until fragrant.
  4. Stir in the diced tomatoes with puree, chicken broth, paprika, onion powder, garlic powder, thyme, and cumin.
  5. Bring the mixture to a boil, then reduce heat to low and simmer for 10 minutes to meld flavors.
  6. Add the turkey breast to the pot.
  7. Cover and cook at a low simmer for 45 minutes, or until the turkey is cooked through.
  8. Remove the turkey from the pot and let it cool slightly.
  9. Dice the cooled turkey breast into bite-sized pieces.
  10. While the turkey cools, add the sliced turkey sausage and uncooked rice to the pot.
  11. Cover and cook on medium-low heat for 15 minutes, stirring occasionally.
  12. Return the diced turkey to the pot along with the hot sauce, salt, and black pepper.
  13. Continue cooking on medium-low heat for 10 minutes until the sausage is cooked through and rice is tender.
