Description

This comforting yet light dish brings together the earthiness of new potatoes with the brightness of fresh greens and the heat of red pepper flakes. The linguine absorbs a simple, savory sauce made from diced plum tomatoes, onions, and garlic, creating a harmonious blend of textures. Its an excellent choice for a quick weeknight dinner or a healthy lunch that feels substantial without being heavy. The addition of green beans adds a nice crunch, while the optional hot peppers provide a gentle kick. Perfect for those seeking a vegan, low-fat meal that doesnt compromise on flavor, this recipe highlights seasonal ingredients in their simplest, most delicious form.

Ingredients

Directions

  1. Bake the potatoes in a 350F (177C) oven for 35-40 minutes, until tender but firm. Alternatively, steam them in water or vegetable stock to cover.
  2. If steaming in vegetable stock, reserve the cooking liquid for the sauce.
  3. When cool enough to handle, cut the potatoes into 1-inch chunks.
  4. If using green beans, cook them in vegetable stock and immediately refresh in cold water.
  5. Drop the pasta into a large kettle of boiling salted water.
  6. Stir the pasta occasionally to prevent sticking.
  7. Heat the 1/2 cup of vegetable stock in a saut pan over moderate heat.
  8. Add the onions and cook, covered, until tender, about 10 minutes.
  9. Add the garlic and optional hot red pepper flakes and cook for 2 minutes longer.
  10. Add the tomatoes, tomato juice, potatoes, greens, and optional green beans to the pan.
  11. Cook until the greens are wilted and the potatoes are heated through.
  12. Season with salt and pepper to taste.
  13. When the pasta is al dente, drain it and toss with the sauce in a warmed bowl.
