Description

This Linguine With Red Clam Sauce is a delightful twist on traditional clam pasta, swapping the usual white wine base for a robust tomato sauce. The dish features tender minced clams simmered in crushed tomatoes, dry sherry, and a blend of oregano and parsley, creating a deep, savory flavor profile with a hint of heat from red pepper flakes. The linguine holds the sauce beautifully, resulting in a hearty and satisfying meal that feels both rustic and elegant. Perfect for a cozy weeknight dinner or a casual gathering with friends, this recipe brings the essence of the sea to your table without the fuss of shucking fresh clams.

Directions

  1. Open the cans of minced clams. Carefully pour the clam juice into a small bowl, leaving the clams in the can. Discard any sediment that settles at the bottom of the cans.
  2. Place a heavy saucepan over medium heat and add the extra virgin olive oil.
  3. Once the oil is warm, add the crushed garlic and sauté for about 10 seconds until fragrant, being careful not to burn it.
  4. Add the crushed tomatoes, dry sherry, reserved clam juice, dried oregano, dried parsley, red pepper flakes, and salt to the saucepan. Stir well to combine.
  5. Reduce the heat to low-medium and let the sauce simmer gently for 20 minutes to allow the flavors to meld.
  6. While the sauce simmers, bring a large stockpot of salted water to a boil. Add the linguine and cook according to package directions until al dente, usually 8 to 10 minutes.
  7. About 1 minute before draining the pasta, add the drained minced clams to the simmering tomato sauce. Stir gently to heat the clams through.
  8. Taste the sauce and add black pepper if desired.
  9. Drain the cooked linguine and add it directly to the saucepan with the clam and tomato sauce. Toss well to coat the pasta evenly.
  10. Serve immediately, topped with grated Parmesan or Romano cheese.
