Description

This savory Chinese-style stir-fry is a quick and flavorful weeknight meal that highlights the rich taste of chicken liver. Paired with salty fermented black beans, aromatic ginger, and garlic, the dish offers a complex umami profile. The addition of crisp snow peas provides a fresh texture contrast to the tender meat. It comes together in just minutes, making it perfect for busy evenings. Serve over steamed rice to soak up the delicious soy and sherry-based sauce.

Ingredients

Directions

  1. Heat 1 tablespoon of peanut oil in a large wok or skillet over high heat.
  2. Add the chicken livers to the hot wok and stir-fry for 3-5 minutes, until browned on the outside but still slightly pink on the inside.
  3. Remove the cooked livers from the wok and set aside, reserving them for later.
  4. Reduce the heat to medium and add the remaining 1 tablespoon of peanut oil to the wok.
  5. Add the fermented black beans, minced garlic, and chopped ginger to the wok.
  6. Stir-fry the aromatics for 1 minute until fragrant.
  7. Add the soy sauce, sherry, chicken broth, and snow peas to the wok.
  8. Bring the mixture to a boil, allowing the snow peas to crisp-tender.
  9. Return the chicken livers to the wok along with the chopped green onions.
  10. Stir gently until the sauce coats the liver and everything is heated through.
  11. Remove from heat and serve immediately.

Note

Chicken livers cook very quickly; avoid overcooking them to prevent a tough texture. They should remain slightly pink in the center.

Fermented black beans (douchi) are salty, so taste the sauce before adding extra salt.

For a thicker sauce, you can mix 1 teaspoon of cornstarch with 1 tablespoon of water and add it to the broth before boiling.

Serve this dish over steamed white rice to balance the strong flavors of the black beans and liver.
