Description

This classic Lobster Bisque features a deep, savory broth made from lobster shells, celery, and aromatics, finished with a smooth béchamel base. The dish is enriched with cream and dry sherry, creating a luxurious, comforting soup that highlights the sweet flavor of the lobster meat. It is an elegant and satisfying main course perfect for special occasions.

  1. Remove the meat from boiled lobsters.
  2. Dice the body meat and mince the tail and claw meat.
  3. Reserve it.
  4. Crush the shells and
  5. add them to the stock along with the onion, celery, cloves, bay leaf and peppercorns.
  6. Simmer these ingredients for 30 minutes.
  7. Strain the stock.
  8. If there is coral roe, force it through a fine sieve.
  9. Combine it with soft butter, blend in the flour.
  10. Gradually pour into a mixture of the heated milk and nutmeg.
  11. When the sauce is smooth and boiling,
  12. add the lobster and
  13. simmer the bisque,
  14. add the sherry and
  15. cover for 5 minutes.
  16. Turn off the heat, Stir in the cream and season to taste.
  17. Serve at once with minced parsley and paprika
