Description

This elegant Lobster Tabbouleh elevates the classic Middle Eastern salad with luxurious seafood. Tender lobster meat is poached to perfection and tossed in a fragrant basil and garlic oil, then arranged around a mound of fluffy couscous mixed with fresh tomatoes, crisp cucumbers, and zesty lemon juice. The dish offers a delightful contrast of textures, from the chewy lobster to the light grains and crunchy vegetables. It is an impressive yet relatively simple meal perfect for summer dinners, special occasions, or when you want to treat your family to a gourmet experience without spending hours in the kitchen.

Ingredients

Directions

  1. In a medium saucepan, combine the chicken stock, butter, and the first 1/4 teaspoon of salt.
  2. Bring the liquid to a boil, then remove the pan from the heat.
  3. Stir in the couscous, cover the pan, and let it sit for 5 minutes until the liquid is absorbed.
  4. Transfer the couscous to a glass bowl and let it cool to room temperature.
  5. In a small bowl, whisk together the minced basil, minced garlic, olive oil, and the second 1/4 teaspoon of salt to create the dressing.
  6. In a large pot, bring 4 inches of water to a rolling boil over high heat.
  7. Carefully add the lobsters to the boiling water and cook until the shells turn bright red, about 8-10 minutes.
  8. Remove the lobsters from the water and let them cool enough to handle.
  9. Extract the meat from the tails and claws, discarding the shells and removing the intestinal tract from the tails.
  10. Cut the lobster meat into 1/2-inch pieces.
  11. In a medium bowl, toss the lobster pieces with 6 tablespoons of the basil-oil mixture until well coated, then set aside.
  12. In a large bowl, combine the cooled couscous, diced tomatoes, diced cucumber, lemon juice, and the remaining basil-oil mixture.
  13. Toss the tabbouleh ingredients together until evenly mixed.
  14. To serve, place a mound of the tabbouleh in the center of each of 4 plates.
  15. Arrange the dressed lobster pieces around the edge of the tabbouleh on each plate.
