Lumpia
Description
These classic Filipino lumpia are the ultimate party appetizer, offering a perfect balance of crispy texture and savory flavor. The filling combines ground meat with crunchy water chestnuts and fresh bean sprouts, seasoned with garlic, onion, and a touch of soy sauce for depth. Wrapped in delicate spring roll wrappers and sealed with a simple flour paste, these rolls fry up golden and irresistible. They are relatively quick to assemble and cook, making them ideal for holiday gatherings, potlucks, or a casual weeknight snack served with a sweet and sour dipping sauce.Ingredients
Directions
-
In a large saucepan or wok, brown the ground meat with minced garlic and chopped onion over medium-high heat until meat is no longer pink.
-
Add the drained water chestnuts, bean sprouts, salt, pepper, and patis or soy sauce to the pan.
-
Cook the mixture for about 2 minutes, stirring frequently, until the vegetables are slightly tender but still crisp.
-
Remove the pan from heat and allow the filling to drain and cool thoroughly to room temperature.
-
In a small bowl, combine flour and water to make a smooth paste for sealing the wrappers.
-
Place a lumpia wrapper on a clean, flat surface with one corner pointing toward you.
-
Place 2 tablespoons of the cooled filling on the bottom third of the wrapper.
-
Fold the nearest corner of the wrapper up and over the filling.
-
Fold the left and right sides inward toward the center to encase the filling.
-
Roll the wrapper tightly toward the open edge to form a cylinder.
-
Apply a small amount of the flour paste to the final edge to seal the roll shut.
-
Repeat the process with the remaining wrappers and filling.
-
Heat salad oil in a deep fryer or large pot to 375°F (190°C).
-
Carefully lower the lumpia into the hot oil in batches, ensuring not to overcrowd the pan.
-
Fry until golden brown and crispy, turning occasionally for even cooking.
-
Remove the fried lumpia with a slotted spoon and drain on paper towels.
-
Serve warm with your favorite dipping sauce.

Note
Ensure the filling is completely cool before assembling the lumpia. Warm filling can steam the wrappers, causing them to become soggy and tear during frying.
Keep the unrolled wrappers covered with a damp cloth to prevent them from drying out and cracking while you assemble the rolls.
For a vegetarian version, omit the meat and increase the amount of water chestnuts, bean sprouts, and mushrooms in the filling.
If you do not have lumpia wrappers, you can use standard spring roll wrappers, though they may be slightly thicker.
Store leftover lumpia in an airtight container in the refrigerator for up to 3 days. Reheat in an oven at 350°F for 10-15 minutes to restore crispiness.
