Mackerel With Mustard Toasts
Description
This elegant yet rustic French-inspired dish features tender mackerel fillets pan-seared until the skin is beautifully crisp, then bathed in a light, aromatic fish stock infused with baby carrots, green onions, and fresh dill. The savory broth highlights the natural richness of the fish without overpowering it. Served alongside crunchy French bread toasts spread with a tangy mixture of mayonnaise and coarse-grained mustard, this meal offers a delightful contrast of textures and flavors. It is a sophisticated option for weeknight dinners or a light lunch, perfect for those who appreciate clean, fresh ingredients and simple, satisfying cooking techniques.Ingredients
Directions
-
In a small bowl, stir together mayonnaise and mustard until well blended; refrigerate until needed.
-
Trim carrot tops, leaving about an inch of green intact, and cut carrots lengthwise in half.
-
In a heavy 2-quart saucepan, combine fish stock, carrot halves, and chopped dill.
-
Heat the stock mixture to simmering, then cover and cook over very low heat while preparing the mackerel.
-
Lightly salt the skin side of the mackerel fillets.
-
Cut the mackerel fillets crosswise into 1/4-inch wide strips.
-
In a large skillet, heat olive oil over medium-high heat.
-
Place mackerel strips skin-side down in the hot skillet and cook for 2 minutes or until the skin is crisp.
-
Turn the strips over and cook just until done, about 1 minute more.
-
Transfer the cooked mackerel to 4 soup plates or a soup tureen.
-
Trim half of the green part of the green onions and discard or reserve for another use.
-
Add the remaining green onions and celery leaves to the simmering stock and cook just until the onions are crisp-tender.
-
Meanwhile, toast the bread slices and spread each with the mustard-mayonnaise mixture.
-
Ladle the fish stock with carrots, onions, and celery leaves over the mackerel pieces in the soup plates.
-
Serve immediately with the mustard toasts.
