Maple Apple Pie
Description
This Maple Apple Pie is a comforting, homemade dessert that captures the essence of fall. The filling combines sweet, tender apples with pure maple syrup and a touch of cornstarch for a perfect, glossy texture. Topped with a buttery pecan crumble and encased in a flaky, homemade shortening crust, every bite offers a delightful balance of sweetness and crunch. It is an ideal centerpiece for holiday dinners, family gatherings, or a cozy weekend treat.Directions
-
Preheat oven to 375 degrees Fahrenheit (191°C).
-
In a large mixing bowl, combine flour, baking powder, and salt.
-
Cut in shortening using a pastry blender or two knives until the mixture resembles coarse crumbs.
-
Sprinkle in cold water, one tablespoon at a time, tossing gently until the dough forms a ball.
-
Divide dough into two equal parts; flatten slightly into discs and wrap in plastic to chill while preparing filling.
-
In a microwave-safe bowl, microwave apple slices on high for 2 minutes; stir and repeat in 2-minute intervals until apples begin to soften. Set aside to cool slightly.
-
In a separate small bowl, whisk together 3/4 cup maple syrup and cornstarch.
-
Microwave the syrup mixture for 2 minutes; stir and continue microwaving in 30-second intervals until thickened.
-
Pour the thickened maple mixture over the softened apples and toss until evenly coated.
-
Roll out the bottom crust on a lightly floured surface into a circle 1/8" thick and 1/2" larger than an inverted 9" pie plate.
-
Gently ease the bottom crust into a greased pie plate, trimming the edge even with the plate.
-
Spoon the cooled apple filling into the unbaked pastry shell.
-
In a microwave-safe bowl, combine chopped pecans, 1 tablespoon maple syrup (from the topping amount), and butter.
-
Microwave the nut mixture on high for 1 minute, stir, and continue microwaving on medium for an additional minute. Stir to break up any clumps.
-
Spread the warm nut mixture evenly over the apple filling.
-
Roll out the top crust to the same dimensions as the bottom crust.
-
Carefully lift the top crust onto the filled pie; trim edges to extend 1/2" beyond the pie plate.
-
Fold the top edge under the bottom crust edge and crimp or flute as desired.
-
Cut several slits in the top crust to allow steam to escape.
-
Bake at 375 degrees for 60 minutes, or until the apples are bubbling through the slits.
-
Brush the top of the pie with remaining maple syrup and bake for an additional 5 minutes.
