Description

These Maple Custards offer a luxurious, silky texture with a deep, caramelized maple flavor. By reducing pure maple syrup before blending it with milk and eggs, you achieve an intense sweetness that balances beautifully with the creamy custard base. This elegant yet simple dessert is perfect for dinner parties or a special weekend treat. It pairs wonderfully with a light salad or roast chicken, providing a comforting end to the meal without being overly heavy.

Ingredients

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small saucepan over high heat, bring 1/2 cup maple syrup to a boil.
  3. Boil until thickened and reduced to about 1/4 cup, approximately 4 minutes.
  4. Reduce heat to low; pour in skim milk and evaporated skim milk.
  5. Stir until the reduced syrup has fully blended with the milk.
  6. Remove the milk mixture from the heat.
  7. In a mixing bowl, lightly whisk whole eggs and egg yolks until combined.
  8. Gradually whisk the hot milk mixture into the eggs, ensuring the eggs do not scramble.
  9. Skim off any foam from the surface of the custard mixture.
  10. Pour the mixture evenly into four 6 oz custard cups or ramekins.
  11. Place the filled custard cups in a shallow baking dish.
  12. Add enough hot water to the baking dish to come 2/3 of the way up the sides of the cups.
  13. Bake for 30 to 40 minutes, or until a knife inserted in the center comes out clean.
  14. Serve warm or chilled, drizzling 1 teaspoon of remaining maple syrup over each custard.

Note

For the richest flavor, use maple syrup graded "Dark Amber."

Be careful when adding the hot milk to the eggs; pour slowly while whisking continuously to prevent curdling.

These custards can be stored in the refrigerator for up to 3 days. Cover tightly with plastic wrap before storing.

If you prefer a richer custard, you can substitute whole milk or heavy cream for the skim milks.
