Description

This Maple Glazed Ham is a show-stopping centerpiece perfect for holiday gatherings or special weekend dinners. The recipe features a fully cooked ham, either shank or butt, slow-smoked to perfection with a sweet and aromatic glaze made from maple syrup, ginger, nutmeg, and allspice. The glaze caramelizes beautifully on the surface, creating a delicious crust that contrasts with the tender, juicy meat inside. Decorated with canned pineapple slices and maraschino cherries studded with whole cloves, this dish offers a classic, home-style flavor profile that appeals to all ages. It is simple to prepare, allowing the natural flavors of the ham and the warmth of the spices to shine through.

Ingredients

Directions

  1. If using a country ham, soak it in water or apple cider for a few hours or overnight to remove excess salt.
  2. Remove thick skin if a stronger smoke flavor is desired.
  3. Trim the fat, leaving no more than 1/2 inch thick covering.
  4. Score the surface of the ham in a diamond pattern.
  5. Combine 1 1/2 cups maple syrup, 1 teaspoon ginger, 1/4 teaspoon nutmeg, and 1/2 teaspoon allspice in a bowl.
  6. Place the ham in a large dish and baste generously with the syrup mixture.
  7. Let the ham stand at room temperature for 1 to 2 hours, basting frequently with the syrup mixture.
  8. Remove the ham from the dish and stud the scored areas with 16 whole cloves.
  9. Place the ham on the smoker grid.
  10. For charcoal smokers, use 7-8 pounds of charcoal, 3 quarts of hot water, and 3-4 wood sticks; smoke for 2.5 to 3.5 hours.
  11. For electric smokers, use 3 quarts of hot water and 3-4 wood sticks; smoke for 2 to 3 hours.
  12. Baste the ham with the remaining syrup mixture at least twice during the smoking process.
  13. During the last hour of smoking, decorate the ham with canned pineapple slices and maraschino cherries.
  14. Baste the ham again after adding the fruit decorations.
  15. Cook until the internal temperature reaches 130&# 194;°F to 140ðF, ensuring the thermometer does not touch the bone.

Note

Use a fully cooked whole, shank, or butt ham. Increase smoking time for larger hams.

If a country ham is used, soaking it in water or apple cider helps reduce the salty taste.

Make certain the meat thermometer is not touching the bone when checking the internal temperature.

For a stronger smoke flavor, remove the thick skin before cooking.
