  2. Pour the boiling water over the oats and butter, stirring until the butter has completely melted.
  3. Add the scalded milk, maple syrup, and salt to the bowl.
  4. Let the mixture cool until it is warm to the touch, approximately 125F to 130F.
  5. Stir in the whole-wheat flour, instant yeast, and beaten egg; beat vigorously with a wooden spoon until the mixture is smooth.
  6. Stir in enough all-purpose flour to form a stiff dough.
  7. Turn the dough out onto a lightly floured surface.
  8. Knead the dough, sprinkling with additional flour as needed to prevent sticking, until smooth and elastic, about 8 to 10 minutes.
  9. Shape the dough into a ball and place it in a lightly buttered bowl; turn once to coat all sides with butter.
  10. Cover with a clean dry towel and let rise in a warm place for 30 minutes.
  11. Punch down the dough and divide it in half.
  12. Shape each half into a loaf and place them in two greased 8 1/2 by 4 1/2 inch loaf pans.
