Marie Augustus Pralines
Description
These Marie Augustus Pralines are a classic American Southern dessert that offers a delightful contrast of textures. The exterior sets into a smooth, caramel-like shell that gives way to a soft, creamy interior studded with generous amounts of chopped pecans. Made with a blend of white and brown sugars, evaporated milk, and butter, these pralines deliver a deep, buttery sweetness that is both comforting and indulgent. They are perfect for holiday cookie exchanges, potlucks, or simply as a sweet treat to enjoy with coffee. While traditional pralines can be tricky to make due to precise candy temperatures, this recipe provides a reliable method for achieving that perfect soft-center consistency every time.Ingredients
Directions
-
In a large heavy-bottomed saucepan, combine the evaporated milk, the first 1/2 pound of butter, white sugar, brown sugar, and salt.
-
Place the saucepan over medium-high heat and bring the mixture to a boil, stirring occasionally to dissolve the sugars.
-
Insert a candy thermometer into the mixture and cook, stirring frequently, until the temperature reaches 235&# 194;°F (113ðC), which is the soft-ball stage.
-
Immediately remove the saucepan from the heat.
-
Add the remaining 1/2 pound of butter to the hot mixture.
-
Stir constantly and vigorously until the butter is fully incorporated and the mixture begins to thicken and lose its glossy shine.
-
Once the mixture has thickened slightly, stir in the chopped pecans and vanilla extract.
-
Quickly drop heaping teaspoons of the mixture onto a greased baking sheet, parchment paper, or foil, spacing them about 2 to 3 inches apart as they will flatten slightly.
-
Allow the pralines to cool at room temperature until firm, about 1 to 2 hours.
