Description

This robust marinade transforms tough cuts of beef into tender, flavorful masterpieces. Blending dry red wine, zesty lime juice, and sharp Dijon mustard, it creates a complex flavor profile that penetrates deep into the meat. The addition of horseradish and cayenne pepper provides a pleasant heat, while garlic and onion powders add savory depth. Perfect for slow-cooking or grilling, this sauce also serves as an excellent basting liquid during the final stages of cooking to build a rich, caramelized crust. Ideal for weekend barbecues or special occasion dinners, it brings a restaurant-quality finish to home-cooked brisket.

Ingredients

Directions

  1. In a large bowl, whisk together the dry red wine, olive oil, lime juice, wine vinegar, and Dijon mustard until well combined.
  2. Stir in the prepared horseradish, salt, onion powder, garlic powder, and ground cayenne pepper until the spices are fully dissolved and the mixture is uniform.
  3. Place the beef brisket in a large resealable plastic bag or a non-reactive dish deep enough to hold the meat in a single layer.
  4. Pour the marinade over the brisket, ensuring all surfaces are coated. If using a bag, press out excess air before sealing.
  5. Refrigerate the brisket for at least 4 hours, preferably overnight, turning occasionally to ensure even flavor absorption.
  6. Remove the brisket from the refrigerator and let it sit at room temperature for 30 minutes before cooking. Reserve the marinade for basting.
  7. Cook the brisket according to your preferred method (grilling, smoking, or roasting).
  8. During the last hour of cooking, brush the reserved marinade over the brisket every 15-20 minutes to build a flavorful crust.

Note

Do not reuse the marinade that has been in contact with raw meat as a basting sauce unless it is brought to a rolling boil first to kill bacteria. For safety, set aside a portion of the marinade before adding it to the raw meat, or boil the used marinade for at least 5 minutes before using it as a basting sauce.

If you find 3 cups of red wine too strong or excessive, you can reduce the wine to 1.5 cups and replace the difference with beef broth or water. The remaining wine can be enjoyed while you cook!

For a milder heat level, reduce the cayenne pepper to 1 teaspoon or omit it entirely. For extra spice, add an additional teaspoon of cayenne or a chopped jalape&# 195;±o.

Store any leftover basting sauce in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 3 months.
