Marty Feins Lo Mein Shrimp-Chicken-Pork-Beef
Description
This classic Lo Mein dish brings the bustling energy of a wok to your home kitchen. Featuring a medley of thinly sliced meats—flank steak, shrimp, chicken, or pork—tossed with al dente spaghetti or egg noodles, this recipe is a feast for the senses. The proteins are velvety-soft, thanks to a quick marinade with cornstarch and soy, while the vegetables retain a satisfying crunch. Lightly seasoned with ginger, scallions, and a touch of sweetness, it strikes the perfect balance of savory and aromatic. Ideal for busy weeknights or casual gatherings, this flexible dish allows you to customize the protein and veggies based on what you have on hand. It’s a hearty, comforting meal that comes together in under thirty minutes.Directions
-
Cook spaghetti or noodles according to package directions until al dente. Drain and rinse under cold water to stop cooking. Toss with a few drops of oil to prevent sticking, then set aside.
-
Slice the flank steak (or other chosen meat) very thinly against the grain into 2-inch pieces.
-
In a bowl, combine the sliced meat, minced ginger, minced scallion, cornstarch, sugar, and 2 tablespoons of light soy sauce. Mix well and set aside to marinate for at least 10 minutes.
-
Heat a wok or large skillet over high heat until smoking. Add 2 tablespoons of peanut oil.
-
Add the marinated meat mixture to the hot wok. Stir-fry for about 2 minutes until just cooked through; do not overcook. Remove meat from the wok and set aside.
-
Add the remaining 2 tablespoons of oil to the wok. Heat until hot.
-
Add the shredded carrots, celery, and cabbage. Stir-fry for 2 minutes until vegetables are tender-crisp.
-
Add the cooked noodles to the wok. Stir well to combine with the vegetables and cook for a few minutes to heat through.
-
Return the cooked meat to the wok. Add the remaining 1 tablespoon of light soy sauce and salt, if using.
-
Stir-fry for another minute to heat everything through and coat evenly. Serve immediately.
