Preheat your oven to 350F (175C).

In a small bowl, dissolve the yeast in the warm water. Let it sit for 5-10 minutes until foamy.

In a separate saucepan, scald the milk until bubbles form around the edges. Remove from heat and let cool until lukewarm (about 110F/45C).

In a large mixing bowl, combine the lukewarm milk, sugar, softened butter, and salt. Stir until the butter is melted and the sugar is dissolved.

In another bowl, whisk together the cinnamon and flour.

Add half of the flour mixture to the milk mixture and stir until smooth.

Beat 3 of the eggs in a small bowl. Add the beaten eggs and the yeast mixture to the bowl with the milk and flour. Mix well.

Gradually add the remaining flour, mixing until a soft dough forms. You may not need all the flour; add only enough to keep the dough from sticking excessively to your hands.

Turn the dough out onto a lightly floured surface.

Knead the dough for about 10-15 minutes, until it is smooth, elastic, and satiny.

Place the dough in a lightly buttered large bowl, turning to coat the top with butter.

Cover the bowl with a damp cloth or plastic wrap. Let the dough rise in a warm place for 2 to 3 hours, or until doubled in size.
