  1. Remove meat from the smoked pork neck bones, discarding the bones.
  2. Coarsely chop the meat from the neck bones.
  3. Place the chopped pork, rough-ground beef brisket, chopped onions, green bell peppers, and minced garlic into a large heavy pot.
  4. Saut over medium-high heat until the meat is thoroughly browned.
  5. Add the tomato paste, tomato sauce, V-8 juice, beer, strong coffee, chocolate syrup, tabasco sauce, salt, chili powder, Mexican oregano, pimientos, jalapenos, Maggi sauce, and 3 tablespoons of the cumin.
  6. Bring the mixture to a slow, rolling boil.
  7. Cook at a boil for 10 minutes, stirring occasionally.
  8. Reduce the heat to low to maintain a gentle simmer.
  9. Cover the pot and simmer for 1 hour, stirring fairly often to prevent sticking.
  10. Add the remaining 1 tablespoon of cumin.
  11. Continue to simmer for an additional 5 minutes to blend the flavors.
