Description

This rich and savory dish draws inspiration from medieval cookery, combining tender cubes of lean lamb with nutty brown lentils. The stew is deepened with warm spices like cinnamon and basil, while dried currants and chopped figs add a delightful sweetness that balances the savory meat and earthy vegetables. Diced turnips or squash provide a hearty texture, simmering slowly until fork-tender. It is a comforting, rustic meal perfect for cold evenings or special gatherings where you want to serve something historically interesting yet deeply satisfying. The combination of textures and flavors makes it a unique centerpiece for any dinner table, offering a taste of history with every spoonful.

Ingredients

Directions

  1. Season the 1 1/4 pounds of lean lamb, cut into 1/2-inch cubes, with 1/4 teaspoon pepper and 1/2 teaspoon salt.
  2. Melt 2 tablespoons of butter in a heavy pot over medium-high heat and brown the lamb pieces on all sides.
  3. Pour in 1 cup of chicken broth, cover, reduce heat to low, and gently simmer the lamb for 45 minutes until tender.
  4. Remove the lamb from the pot and set aside, reserving the cooking liquid.
  5. Rinse 1 cup of dry lentils thoroughly, picking out any stones or debris.
  6. In the same pot, bring 4 cups of beef broth to a boil, then add the lentils.
  7. Reduce heat to low and simmer the lentils for 15 minutes until they begin to soften.
  8. Stir 1/4 teaspoon cinnamon, 1/4 teaspoon salt, and 1/2 teaspoon dried basil into 1 cup of diced turnip or squash.
  9. Add the seasoned vegetables, 1 cup of currants, and 2/3 cup of coarsely cut figs to the simmering lentils.
  10. Cook very slowly for another 10 minutes until the vegetables are tender and flavors meld.
  11. Stir the cooked lamb back into the lentil mixture to heat through.
  12. Transfer to a serving bowl and garnish with edible gold leaves or dandelion flowers if desired.

Note

Storage: This stew keeps well in the refrigerator for up to 3 days. The flavors often deepen overnight, making it even more delicious the next day.

Substitutions: Brown lentils hold their shape well, but green lentils can be used as a substitute. If you prefer a milder meat, chicken thighs work well in this recipe.

Variations: For a richer stew, you can add a splash of red wine when browning the lamb. Squash varieties like butternut or acorn are excellent alternatives to turnips.

Tips: Ensure the lamb is browned well before simmering to develop a deeper flavor base. Do not skip rinsing the lentils to remove any dust or small stones.
