Classic Italian preserved eggplant slices marinated in herb-infused olive oil
Melanzane Sott'olio recipe image

Melanzane Sott’Olio is a traditional Italian preservation method that transforms humble eggplant into a luxurious condiment. By salting and pressing the slices, you draw out excess moisture, concentrating the flavor and creating a tender, silky texture. The eggplant is then layered with fresh mint, garlic, and spicy serrano peppers before being submerged in high-quality extra virgin olive oil. This process infuses the vegetables with aromatic herbs and gentle heat. The result is a rich, savory treat perfect for serving at room temperature as part of an antipasto spread, alongside crusty bread, or mixed into pasta dishes. The flavors deepen beautifully over time, making this a rewarding project for home cooks.

Ingredients

Directions

  1. Remove stems from the eggplants and slice them lengthwise into 1/2-inch thick planks.
  2. Place slices in a large bowl and toss with salt until evenly coated.
  3. Arrange the salted slices on a roasting rack set over a roasting pan.
  4. Cover the eggplant with a layer of cheesecloth and place weights (such as bricks wrapped in foil) on top to press them.
  5. Let the eggplant press in a cool place for 12 hours to draw out moisture.
  6. Remove the slices from the rack and place them in a large mixing bowl.
  7. Add mint leaves, thinly sliced garlic, dried acacia flowers, and 2 tablespoons of red wine vinegar; toss thoroughly to coat.
  8. Pack the eggplant slices tightly into a clean glass jar, layering them one on top of another.
  9. Tuck serrano peppers intermittently between the layers of eggplant.
  10. Press the eggplant down firmly with your fingers and add the remaining 2 tablespoons of red wine vinegar.
  11. Fill the jar with extra virgin olive oil until the eggplant is completely submerged.
  12. Seal the jar with a lid and refrigerate.

Note

Allow the eggplant to age for at least one week before eating for best flavor.

Check periodically and top off with more olive oil if the level drops below the eggplant.

Serve at room temperature as an antipasto.

Ensure all jars and utensils are thoroughly sterilized before use to prevent spoilage during the preservation process.

The oil infused with garlic and herbs can be used for cooking or as a finishing oil, but it should be consumed within the same timeframe as the eggplant due to botulism risks associated with garlic in oil.
