Ingredients

Directions

  1. Preheat oven to 350F (175C). Grease an 8x8 inch baking pan and set aside.
  2. In a large clean bowl, beat egg whites on high speed until stiff peaks form.
  3. Gradually add 1/4 cup of the sugar to the egg whites, continuing to beat until stiff and glossy. Set aside.
  4. In a separate bowl, cream the softened margarine with the remaining 3/4 cup sugar until light and fluffy.
  5. Beat in the salt, vanilla extract, and egg yolks until the mixture is smooth and creamy.
  6. In a small bowl, sift together the 1 1/2 cups of flour and baking powder.
  7. Alternately add the dry flour mixture and the milk to the creamed margarine mixture, beginning and ending with the flour. Mix until just combined.
  8. Gently fold one-third of the whipped egg whites into the batter to lighten it, then carefully fold in the remaining whites.
  9. Toss the fresh blueberries with the 1 tablespoon of flour to coat them evenly.
  10. Gently fold the floured blueberries into the batter, being careful not to burst the berries.
  11. Pour the batter into the prepared 8x8 inch pan and smooth the top.
  12. Sprinkle a cinnamon-sugar mixture evenly over the top of the batter.
  13. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  14. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Note

Store leftovers wrapped in the refrigerator or freeze for later enjoyment.

Ensure the bowl used for whipping egg whites is completely clean and free of any grease or yolk, as even small amounts of fat can prevent the whites from reaching stiff peaks.

Coating the blueberries in flour helps prevent them from sinking to the bottom of the cake during baking.

For the cinnamon-sugar topping, mix 1 tablespoon of granulated sugar with 1/2 teaspoon of ground cinnamon before sprinkling over the batter.
