Menudo-Tripe-Soup
Description
This traditional Mexican menudo is the ultimate comfort food, celebrated for its deep, savory broth and tender beef tripe. Simmered for hours with garlic, onion, and a vibrant red chile puree made from dried California chiles, the soup develops a complex, spicy flavor profile that warms the soul. The addition of hominy provides a hearty texture, while fresh toppings like chopped cilantro, green onions, and lime wedges add a bright, acidic contrast. Often served as a hangover cure or a festive Sunday gathering dish, this slow-cooked meal is perfect for cold days when you crave something substantial and deeply satisfying.Ingredients
Directions
-
Scrape off any excess fat from the tripe and cut it into 1-inch squares.
-
Place the tripe and calf's foot in a large bowl, cover with cold water and vinegar, and let stand for 3 hours to clean.
-
Drain and rinse the tripe and calf's foot thoroughly under cold water.
-
Transfer the tripe and calf's foot to a large stockpot.
-
Add garlic, onion, and enough water to cover the ingredients by about 1 to 1 1/2 inches.
-
Season with salt to taste, bring to a boil, then reduce heat to a simmer.
-
Cover and simmer for about 6 hours, skimming off any foam that rises to the surface, until the tripe is tender.
-
Meanwhile, prepare the red chile puree by blending soaked California chiles with water.
-
During the last hour of cooking, add the hominy and the red chile puree to the pot.
-
Continue simmering until the hominy is tender and the flavors have melded.
-
Ladle the hot menudo into large bowls.
-
Serve immediately with chopped green onions, cilantro leaves, lemon wedges, and heated corn tortillas on the side.
