This classic Mint Jelly is a refreshing condiment that pairs beautifully with rich meats like roast lamb or game. Made by simmering baking apples to extract their natural pectin and juice, then combining it with fresh mint, sugar, and a touch of vinegar for balance. The result is a clear, jewel-toned jelly with a bright, herbal flavor and a smooth, gelatinous texture. Ingredients

Directions

  1. Wash the apples and cut them into pieces, leaving the cores and skins on.
  2. Place the apple pieces in a large pot and add the water.
  3. Simmer the mixture slowly until the apples break down into a thick pulp.
  4. Strain the mixture through a jelly bag or fine-mesh sieve to extract the juice.
  5. Measure the juice; for every 2-1/2 cups of juice, add 2 cups of sugar.
  6. Combine the juice and sugar in a clean pot and stir over low heat until the sugar dissolves.
  7. Bring the mixture to a rapid boil and cook until it reaches the setting point (220ðF or 104ðC).
  8. Stir in the vinegar, chopped mint, and a few drops of green food coloring if desired.
  9. Remove from heat and let cool slightly, stirring occasionally to distribute the mint.
  10. Ladle the hot jelly into hot, sterile jars.
  11. Cover the jars, seal tightly, and store in a cool, dark place.
