Description

Mississippi Mud Cake is an intensely chocolatey dessert that lives up to its name with a dark, moist crumb and deep flavor profile. This recipe uniquely combines strong brewed coffee and brandy to enhance the richness of the unsweetened chocolate, creating a sophisticated taste that pairs perfectly with the vegan-friendly margarine base. The batter is baked slowly at a low temperature in a bundt pan, resulting in a dense, fudgy texture rather than a light sponge. It is an excellent choice for special occasions or when you crave a serious chocolate treat. Serve it plain or with a dusting of powdered sugar for a simple yet elegant finish that satisfies any sweet tooth.

Ingredients

Directions

  1. Preheat oven to 275&# 194;°F (135ðC).
  2. Grease a 10-inch bundt pan thoroughly and sprinkle with cocoa powder to prevent sticking.
  3. In a medium bowl, sift together the white flour, baking soda, and salt. Set aside.
  4. In a saucepan over low heat, combine the strong coffee and brandy. Heat for 5 minutes, stirring occasionally.
  5. Add the unsweetened chocolate and margarine to the hot coffee mixture. Stir continuously until completely melted and smooth.
  6. Stir in the sugar and continue cooking until the sugar is fully dissolved. Remove from heat.
  7. Allow the chocolate mixture to cool slightly until it is warm to the touch but not hot.
  8. Transfer the cooled chocolate mixture to a large mixing bowl.
  9. Add the flour mixture to the chocolate mixture about 1/2 cup at a time, beating well after each addition until smooth.
  10. Stir in the vanilla extract and beat for one minute to ensure the batter is uniform.
  11. Pour the batter into the prepared bundt pan.
  12. Bake for 1 1/2 hours, or until a toothpick inserted into the center comes out clean.
  13. Allow the cake to cool in the pan for 10 minutes.
  14. Invert the cake onto a serving plate and let it cool completely before removing the pan.

Note

This recipe is adapted from "New Recipes From Moosewood Restaurant."

For best results, use a high-quality dark chocolate to enhance the depth of flavor.

If you do not have a bundt pan, you can bake this in a loaf pan, but you may need to adjust the baking time.

The cake is very dense and moist; ensure it is completely cool before attempting to remove it from the pan to avoid breaking.

Store leftovers in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
