Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC). Line cookie sheets with foil or parchment paper.
  2. In a large microwave-safe bowl or saucepan, melt margarine. Add chocolate chips and stir until partially melted. Remove from heat and continue stirring until chips are completely melted and smooth.
  3. Pour the chocolate mixture into a large mixing bowl. Let it cool slightly, then add brown sugar and water.
  4. Beat in eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Add dry ingredients to the wet mixture and stir until just combined.
  6. Cover the dough and chill in the refrigerator for at least 30 minutes to firm up.
  7. Roll the chilled dough into very small balls, approximately 1/2 teaspoon each.
  8. Place dough balls 2 inches apart on the prepared cookie sheets.
  9. Bake for 10 minutes or until the bottoms are lightly golden.
  10. Remove from oven. While cookies are still hot on the pan, place half a mint candy piece on top of each cookie.
  11. Transfer cookies to waxed paper or a cooling rack. Wait about a minute for the candy to soften slightly, then use a knife or fork to swirl the candy across the top of each cookie.
  12. Allow cookies to cool completely before serving.

Note

Use firmly packed brown sugar for best texture and flavor.

Chilling the dough helps prevent the cookies from spreading too much during baking.

Be careful when swirling the melted candy; it will be very hot.

Store cookies in an airtight container at room temperature for up to 5 days.

For a vegan version, ensure margarine and chocolate chips are dairy-free, and use egg replacers instead of eggs. Note that the original recipe includes eggs and dairy-based margarine, so it is not inherently vegan.
