Description

This vibrant mixed-fruit compote is the perfect way to showcase seasonal produce with a spicy twist. The base is a simple syrup infused with fresh ginger, creating a warm, aromatic backdrop for the cool sweetness of cantaloupe, strawberries, and kiwi. The addition of star fruit or pineapple adds a beautiful visual element and a bright, tangy contrast. After chilling, the flavors meld together, resulting in a tender, juicy dessert that is as elegant as it is easy to prepare. It serves beautifully cold, making it an ideal accompaniment to light summer meals or a standalone treat.

Ingredients

Directions

  1. Combine water, sugar, and 5 of the ginger slices in a heavy medium saucepan.
  2. Bring the mixture to a boil over medium heat, stirring constantly until the sugar has completely dissolved.
  3. Reduce heat and simmer gently until the liquid is reduced to 1 cup, which should take about 15 minutes.
  4. Remove the saucepan from heat and allow the syrup to cool to room temperature.
  5. While the syrup cools, arrange the cantaloupe, strawberries, apricots (or plums), star fruit (or pineapple), and kiwi in a shallow serving bowl.
  6. Sprinkle the arranged fruit evenly with fresh lime juice.
  7. Strain the cooled ginger syrup over the fruit, catching the ginger slices in the strainer.
  8. Take 3 of the reserved ginger slices and cut them into thin matchstick-size strips.
  9. Sprinkle the ginger matchsticks over the top of the fruit for garnish.
  10. Cover the bowl tightly with plastic wrap and refrigerate for at least 3 hours, or up to 8 hours, to allow the flavors to meld.
  11. Serve the compote cold, spooning some of the accumulated syrup over the top just before serving.

Note

The compote needs time to chill so the fruit absorbs the ginger syrup and softens slightly. The longer it chills (up to 8 hours), the more flavorful it will be.

If star fruit is unavailable, you can substitute with additional sliced pineapple or mango. Ensure any substitute fruit is fresh and firm.

For a spicier kick, add an extra slice of ginger to the syrup. For a milder flavor, use fewer slices or remove them earlier during the simmering process.

Store any leftovers in an airtight container in the refrigerator for up to 2 days. The fruit may become softer with extended storage.
