The combination of coffee and chocolate is a classic pairing that never fails to impress, making this recipe a standout choice for dessert lovers.

Ingredients

Directions

  1. Preheat oven to 275F (135C).
  2. Line 2 baking sheets with parchment paper.
  3. Draw eight 3-inch circles on each sheet as guides for piping.
  4. In a clean bowl, beat egg whites with lemon juice and salt until soft peaks form.
  5. Gradually add sugar, 1 tablespoon at a time, beating until stiff, shiny peaks form.
  6. Spoon meringue into a pastry bag fitted with a star tip.
  7. Pipe rosettes or stars around the drawn circles, leaving the center empty.
  8. Bake until dry and slightly colored, about 45 minutes.
  9. Remove from oven and let cool completely on the sheets.
  10. Gently peel off the parchment paper.
  11. In a chilled bowl, beat whipping cream, coffee liqueur, and instant coffee powder until stiff peaks form.
  12. Melt semisweet chocolate in a double boiler over gently simmering water, stirring until smooth.
  13. Spread a thin layer of melted chocolate onto a baking sheet.
  14. Refrigerate for 10 minutes until the chocolate begins to set.
  15. Using a paint scraper or putty knife held at a slight angle, push the chocolate away from you in quick motions to create ruffles.
  16. Refrigerate the chocolate ruffles until firm.
  17. To assemble, place one meringue on a dessert plate and top with another.
  18. Fill the center with the mocha whipped cream.
  19. Repeat with remaining meringues and cream.
  20. Refrigerate assembled desserts for 30 minutes.
  21. Garnish each dessert with a chocolate ruffle and chocolate coffee bean candies.

Note

Meringues can be prepared up to 1 day ahead. Store in an airtight container in a dry place to prevent them from becoming soggy.

If fresh lemon juice is unavailable, distilled white vinegar can be used as a substitute for stabilizing the egg whites.

Ensure the bowl and beaters are completely clean and grease-free when whipping egg whites to ensure proper peak formation.

For best results, use superfine sugar or process granulated sugar in a blender to avoid grainy texture in the meringue.
