Description

This Mock Sour Cream is a clever, high-protein alternative to traditional sour cream, perfect for health-conscious cooks. By blending well-drained cottage cheese with a splash of skim milk, dry buttermilk powder, and fresh lemon juice, you create a texture that is surprisingly smooth and rich. The tangy flavor profile mimics the classic condiment without the heavy saturated fat content. It works beautifully as a topping for baked potatoes, chili, or tacos, or as a base for creamy dressings and dips. This recipe is quick to prepare, requiring only a few minutes of blending time, and stores well in the refrigerator, making it a versatile staple for everyday cooking.

Ingredients

Directions

  1. Place the well-drained cottage cheese, dry buttermilk powder, skim milk, lemon juice, and salt into a food processor or high-speed blender.
  2. Process the mixture on high speed until it becomes completely thick, smooth, and creamy, scraping down the sides of the bowl as needed.
  3. Transfer the finished mock sour cream to an airtight container and refrigerate until ready to use.

Note

For best results, ensure the cottage cheese is very well-drained before adding it to the processor to achieve the thickest consistency.

This mixture can be stored in the refrigerator for up to 5-7 days. Stir well before using if separation occurs.

Omit the salt if you are on a low-sodium diet. You can also adjust the tanginess by adding more lemon juice to taste.

If you do not have dry buttermilk powder, you can substitute with an additional tablespoon of lemon juice and a pinch of citric acid, or simply use a little more milk and adjust thickness accordingly.
