  1. In a large pot, brown the Italian sausages over medium-high heat until cooked through and well-browned on all sides. Remove sausages from the pot and set aside.
  2. Pour off excess grease if desired, leaving about 1-2 tablespoons of fat in the pot. Add vegetable oil if needed.
  3. Add diced onions to the pot and cook over medium-low heat, stirring often, until they are soft and golden brown. Do not let them burn.
  4. Add minced garlic to the onions and cook for another minute until fragrant.
  5. If using ground meat, add it now and brown thoroughly, breaking it up into small crumbles. Drain excess grease if necessary.
  6. Add the tomato paste and tomato sauce to the pot. Stir to combine with the onion mixture.
  7. Rinse the tomato paste cans with water and add the water to the pot to capture remaining flavor.
