Moussaka With Rice
Description
This comforting vegan moussaka reimagines the classic Greek dish by layering tender eggplant and potatoes with a flavorful rice and tomato mixture. The base is bound together with a rich, creamy soy milk béchamel seasoned with nutmeg and allspice. It offers a satisfying texture contrast between the soft vegetables and the sturdy rice grains. Perfect for a cozy weeknight dinner or a vegetarian potluck main course, this dish captures the warm, aromatic essence of Mediterranean cooking without the meat.Directions

Dry the eggplant rounds thoroughly and fry them in olive oil until they just begin to turn golden.
-
Remove the eggplant and set aside.
-
Fry the potato slices in the same oil until tender and lightly browned.
-
In a separate pot, heat the ghee over medium heat.
-
Gradually stir in the flour, then slowly whisk in the soy milk.
-
Add a pinch of salt, pepper, and nutmeg to the sauce.
-
Simmer the sauce gently for 1 minute until thickened, then set aside.
-
