Directions
-
Preheat oven to 350F (175C) if using oven method, or prepare a microwave-safe bowl.
-
In a large mixing bowl, combine the rolled oats, crushed cornflakes, desiccated coconut, mixed dried fruit, and full-cream milk powder.
-
In a small saucepan over medium-low heat, combine the butter, brown sugar, honey, and peanut butter.
-
Simmer the wet ingredients, stirring constantly, until the butter is melted and the mixture is smooth and combined, about 3 minutes. Alternatively, microwave in 1-minute intervals, stirring between each, until smooth.
-
Pour the warm wet mixture over the dry ingredients in the large bowl.
-
Stir thoroughly until all the dry ingredients are evenly coated and moistened.
-
Line a rectangular baking pan or biscuit tray with parchment paper.
-
Press the mixture firmly and evenly into the prepared pan using the back of a spoon or your hands.
-
Place the pan in the refrigerator for at least 1 hour, or until the bars are firm and set.
-
Lift the set block out of the pan using the parchment paper and cut into 15 equal bars.

Note
Storage: Keep the bars in an airtight container in the refrigerator for up to two weeks. They can also be frozen for longer storage.
Texture Tip: Desiccated coconut is preferred over shredded coconut as it integrates better and doesn't make the bars too coarse.
Customization: You can substitute the cornflakes with other cereal crumbs like Rice Bubbles (Rice Krispies) for a lighter texture. Be cautious with powdery cereals as they can make the bars dense.
Serving: These bars are ideal for hiking, trail mixes, or as a quick snack at work or school. They soften in heat but hold their shape well.
