  2. Separate the head from the body and carefully remove all bones from the fish flesh.
  3. Set aside the head and bones; they will be used for flavoring the poaching liquid.
  4. Place the sliced onion, carrot, chopped celery, one slice of lemon, and peppercorns into a large pot or fish poacher.
  5. Add the fish fillets, the reserved head, and bones to the pot.
  6. Pour in enough cold water to cover the ingredients completely and add 1/2 teaspoon of salt.
  7. Bring to a gentle simmer, cover, and cook for 10 to 20 minutes, or until the fish is cooked through.
  8. Check for doneness by ensuring the eye pops out slightly and the meat flakes easily with a fork.
  9. Remove the pot from the heat.
