  1. Grind the ginger, garlic, and blanched almonds with a little water to form a smooth, fine paste. Set aside.
  2. Heat 2 tablespoons of vegetable oil in a heavy-bottomed pan or wok over medium-high heat.
  3. Add the chicken pieces and fry until they are golden brown on all sides. Remove the chicken from the pan and set aside on a plate.
  4. In the same pan, add the remaining oil. Add the cardamom pods, bay leaves, cloves, and cinnamon stick.
  5. Fry the spices for about 1 minute until fragrant, being careful not to burn them.
  6. Add the chopped onions to the pan and fry until they turn golden brown and translucent.
