They pair wonderfully with a glass of white wine or a light beer. Simple to assemble yet impressive in presentation, these triangles are sure to disappear quickly from the serving platter.Ingredients
Directions
-
Preheat the oven to 200&# 194;°C/400ðF/Gas Mark 6.
-
In a mixing bowl, combine the grated Lancashire cheese, sliced spring onions, and wholegrain mustard. Stir until well blended.
-
Melt the butter in a small saucepan over low heat.
-
Lay out one sheet of filo pastry on a clean work surface. Brush lightly with melted butter and place a second sheet on top. Brush with butter again and add a third sheet to create a stack of three.
-
Repeat this process with the remaining three sheets of filo pastry to create a second stack of three.
-
Cut each stack of pastry into six strips, approximately 3 inches wide.
-
Spoon a small amount of the cheese mixture onto the wide end of each pastry strip.
-
Fold the pastry over the filling at a triangular angle to cover the filling. Continue folding the pastry over itself in a triangular pattern until the strip is used up, sealing the edges with a little water if necessary.
-
Arrange the 12 triangular parcels on a baking sheet.
-
Brush the tops of the triangles with the remaining melted butter and sprinkle evenly with poppy seeds.
-
Bake for 15 to 20 minutes, or until the pastry is golden brown and crisp.
-
Remove from the oven and allow to cool for a few minutes before serving.
