Ingredients

Directions

  1. Lightly grease a 9x9 inch square baking pan and line with parchment paper if desired.
  2. In a large saucepan, melt 1/2 cup butter over low heat.
  3. Stir in the cocoa and white sugar until combined.
  4. Remove from heat and stir in the beaten egg and 1/2 teaspoon vanilla.
  5. Add the graham wafer crumbs and mix well until the mixture is uniformly moist and dark.
  6. Press the crumb mixture firmly and evenly into the bottom of the prepared pan.
  7. Place the pan in the refrigerator to set while you prepare the filling.
  8. In a bowl, beat together 1/2 cup softened butter, icing sugar, and custard powder until smooth.
  9. Add milk, one tablespoon at a time, mixing until a smooth, spreadable frosting consistency is achieved.
  10. Spread the filling evenly over the chilled base layer.
  11. Return the pan to the refrigerator to chill the filling layer.
  12. In a small saucepan, melt the chocolate squares, 2 tablespoons butter, and vanilla drops over low heat, stirring until smooth.
  13. Pour the chocolate topping over the chilled filling, spreading quickly to create an even layer.
  14. Return the pan to the refrigerator and chill for at least 2 hours, or until the chocolate is completely set.
  15. Lift the bars out of the pan using the parchment paper or run a knife around the edges, then cut into squares.

Note

**Storage:** Store Nanaimo bars in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 3 months; thaw in the fridge before serving.

**Custard Powder:** Traditional Nanaimo bars use custard powder (like Birds) for the filling. If unavailable, you can substitute with 1/4 cup of instant vanilla pudding mix, though the flavor profile will differ slightly.

**Chocolate Topping:** For a smoother topping, ensure the chocolate is finely chopped before melting. If the chocolate seizes, add a tiny splash of warm milk and stir gently.

**Crumb Base:** Ensure the graham wafer crumbs are fine for a better texture. If your crumbs are large, pulse them briefly in a food processor.
