This New Orleans Daube is a robust, slow-braised beef dish that embodies the hearty spirit of Southern cooking. A 4-5 pound beef roast is gently cooked with salt pork, onions, garlic, and a blend of thyme, bay leaves, and cloves. The long cooking time transforms the tough cut into fork-tender meat, while the sherry and water create a rich, aromatic pan sauce. Unlike traditional stews served with potatoes, this recipe is traditionally plated over cooked spaghetti, allowing the noodles to soak up the flavorful juices. It is a perfect comfort food for cold evenings or family gatherings, offering a deep, savory taste that pairs beautifully with crusty bread or a crisp green salad.

Ingredients

Directions

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. In a large Dutch oven or heavy roasting pan, combine the chopped salt pork, sliced onions, parsley, crumbled bay leaves, salt, crushed garlic, pepper, thyme, and ground cloves.
  3. Place the beef roast on top of the vegetable and spice mixture.
  4. Pour the water and sherry into the pan around the meat.
  5. Cover the pan tightly with a sheet of foil, then place the lid on top to ensure a sealed environment for braising.
  6. Bake in the preheated oven for 3 hours, or until the meat is fork-tender. Do not remove the lid during this time.
  7. While the meat cooks, prepare the spaghetti according to package directions.
  8. Remove the beef from the pan and let it rest for 10 minutes before slicing.
  9. Serve the sliced beef over the cooked spaghetti, spooning the pan juices and vegetables over the top.
