Ingredients

Directions

  1. In a large saucepan, combine sugar, corn syrup, 1/2 cup water, and salt over medium heat.
  2. Heat the mixture to boiling, then cook while monitoring with a candy thermometer until it reaches 270ðF (132ðC) (soft crack stage).
  3. While the sugar mixture heats, beat egg whites in a non-plastic bowl until stiff peaks form.
  4. Remove the sugar mixture from heat and slowly pour it in a thin stream into the beaten egg whites while mixing on low speed.
  5. Continue mixing for about 20 minutes until the nougat thickens to a dough-like consistency.
  6. Fold in the roasted almonds.
  7. Press the nougat mixture firmly into a greased 9x9 inch pan.
  8. Chill the pan until the nougat is firm.
  9. Melt caramels with 2 tablespoons water in a small saucepan over low heat.
  10. Spread the melted caramel over the chilled nougat layer.
  11. Melt the milk chocolate chips and spread evenly over the caramel layer.
  12. Chill again until set, then cut into squares.
