Ingredients

Directions

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. Place the rice and water in a large heavy-based saucepan over high heat. Cover and bring to a boil.
  3. Reduce heat to low and cook for 30 minutes or until the water is absorbed.
  4. Remove from heat and let the rice stand, covered, for 5 minutes.
  5. Stir the rice with a fork to separate the grains, then chill for 20 minutes.
  6. Drizzle rice vinegar over the chilled rice and stir to combine evenly.
  7. Place the drained salmon, mayonnaise, and wasabi in a bowl; mash until almost smooth.
  8. Place a nori sheet shiny-side down on a bamboo mat, with the shortest edge facing you.
  9. Using damp fingers, gently press a quarter of the rice over the nori sheet, leaving a 2cm strip at one end.
  10. Using your finger, make an indent along the center of the rice layer.
  11. Spread 2 tablespoons of the salmon mixture along the indent of the rice.
  12. Top with a quarter each of the julienned cucumber and capsicum.
  13. Roll up tightly, using the bamboo mat as a guide to seal the edge.
  14. Cut the rolls in half to serve.
