Directions

  1. To make the hot pepper oil, combine hot red pepper flakes and oil in a small saucepan over medium heat.
  2. Bring the mixture to a gentle boil, then immediately remove from heat.
  3. Let the oil cool completely, then strain into a small glass container and refrigerate.
  4. In a blender, combine peanut butter, water, light soy sauce, dark soy sauce, tahini, dark sesame oil, sherry, rice wine vinegar, honey, minced garlic, and minced ginger.
  5. Blend until the mixture is completely smooth and creamy.
  6. With the blender running, slowly add hot pepper oil and hot water until the sauce reaches the consistency of whipping cream.
  7. Taste and adjust seasoning if necessary, adding more honey for sweetness or vinegar for tang.
  8. To prepare garnish, peel the carrot into long, thin shavings about 4 inches long.
  9. Place carrot shavings in ice water for 30 minutes to curl, then drain and pat dry.
  10. Just before serving, toss your prepared noodles or vegetables with the sauce.
